This has a good explanation. The elephant head of ganesh comes from his paramouncy in the Indian pantheon, the elephant being a symbol of India. Ganesha wasnt a vedic diety neither is there any indication of Dravidian origin. Ganesha being given an elephant head by lord shiva is a symbol of his adoption in the Indo pantheon.
