From what I understand, gaur, bisons and others were still sacrificed, that being said I don't see an issue with it being considered sacred. The only issue is some Jeets don't have the power to even defend the stuff they care for. It's the same way Americans partially feel about chinks earing the dogs, they can't do anything about it, except the weight of religious doctrine.

Even if we put that aside, scriptures make very clear distinction between cattles and what is considered aghinya. Buffalo were very common as meal among many, even sacrifices, same for bisons and other bovines as well. However if we think about it influx of tipu sultan who forced people to eat flesh of cow may have caused an aversion to meat of bovine as a whole due to a rising lack of trust towards abrahamic groups.
If collectively all people decided to make sure that cows are never endangered, specially the indus breed of cow, we get a society where we can eat other form of red meat, buffalo, bison and so on and build mutual trust on it. Not being able to keep aghingya safe from butcher is what holds people back in trust here, not following the law itself, but lack of iron will to enforce it.
Nepal is a fascinating example of this. They do buffalo sacrifice, but they will execute a person for harming a cow. This clearly shows that it is possible to follow scriptures and consume the other form of red meat, finding a delicate kind of balance in between.
