The NRI dream you're referring to is nearing it's end in 2026, settling abroad has been getting increasingly difficult in the post pandemic era.
The only exception to this would be the doctor jeets tbh, healthcare workers will always be in demand everywhere or you could also become fluent in German and pursue being a blue collar laborer in Germany for example, they are facing a massive shortage of dehadi majdoors.

Yes doing delivery is not counted as a full time job for non EU people but if you become fluent in german get into training for blue collar trades such as carpentry, truck driving, construction worker, old age home worker etc you'll qualify for PR
these jobs are very high in demand btw but you must speak fluent German
