i gave tofu antother chance and this time i really tried to make it good. i made a bamboo and thai eggplant soup and the tofu fits really good in it as a short refuge from scoville-units and the texture is quite nice.
i think of tofu as this flavorless rectangle that can be cut into any convenient size and by heating it gently for a long time, i can precisely get it to be as firm as i want it to be. this is what my early attempts were lacking.
i use a seperate small hotplate (just 500 watt XD) with a seperate small little pot and the tofu cubes they lie inside the pot in a thin pool of peanut-oil just to gently keep the tofu almost hot over time.
still nothing i would seriously add to my diet though. more like candy. or more like cooking practice.

these thai eggplants were very expensive. 500g cost me like 6€. for those same 6€ i could find 5-10kg of potato.
i am happy to report that they came out nice. i did not overcook them, i threw them end 5 minutes before i cooled the soup down with coconut milk and vigorous stirring! this worked, it quickly cooled the soup from a strong boil down so the eggplant would not turn into mush.
(since i am using such a deep soup pot, i noticed i can stir the soup way harder with the ladle. looks cool, feels nice and helps it cool down. is a lot of fun to create a big swirl in the pot with the ladle)

I too struggled with tofu, I couldn’t understand how to make it fit in Indian dishes. The taste remained and it just didn’t fit with traditional Indian dishes. Then I understood that you need to boil tofu for at least five minutes in salted water and then use it how so ever, boiling reduces that typical tofu taste and makes it a blank canvas and then tofu simply becomes a part of any dish. as a vegetarian tofu really is a good low-calorie high protein option, which now I add in Diet to hit my protein goals.
